At the heart of San Diego's culinary scene lies Zama, a convergence of ancient Amazonian traditions and modern Californian sensibilities. Our chef's journey through both worlds, weaving together ingredients and techniques to present a menu that's as playful as it is profound.
Pioneered by the culinary visionaries Alessandro Minutella & Vincenzo Lo Verso from the renowned San Diego Dining Group - masterminds behind favorites like Greystone Steakhouse, Osteria Panevino, Allegro, and many more - Zama's creation has also been touched by the innovative spirit of Mario Liga & Giancarlo Guttilla, the forces behind Rustic Cucina & Basilico.
At Zama, we proudly curate a menu that reverberates with the rhythms of Latin America, highlighted by exquisite Peruvian and Mexican creations such as the Trio of Ceviche and Agua Chile. To complement this, our Japanese-inspired sushi bar, helmed by the esteemed Chef Takuya Kudo (alumnus of Nobu and Lumi) and Executive Chef Jovani Palacious, beckons diners into a world of refined flavors set against the luxuriant and immersive jungle-inspired space.
